Ingredients of Gingerbread Loaf
- It's 200 grams of caster sugar.
- It's 250 ml of full fat milk.
- You need 3 tbsp of golden syrup.
- It's 175 grams of butter.
- Prepare 1 tbsp of ground ginger.
- It's 1 tsp of bicarbonate of soda.
- You need 1 tsp of ground allspice.
- It's 3 tbsp of crystallised ginger, optional.
- You need 250 grams of plain flour.
It is truly one of the easiest cakes to make and, if you follow my instructions (!), you will have very little washing up too. In large bowl, beat brown sugar and butter with electric mixer on medium speed until light and fluffy. Gingerbread Loaf step by step
- Preheat the oven to 180 c/ gas mark 4..
- Grease with butter and then flour approximately a 20 x 10 cm loaf tin..
- Then in a saucepan, combine the butter, milk, golden syrup and sugar. Bring to the boil, then remove from the heat and set aside..
- Sieve the flour, ground ginger, allspice and bicarbonate of soda in a medium to large bowl..
- Stir in the boiled mixture until just about blended..
- Then pour the batter into the prepared tin..
- Turn the oven down to 160c/ gas mark 2 1/2..
- Transfer and bake for approximately 1 hour or until the top loaf springs back when touched..
- When done remove from oven and let it cool in the loaf tin..
You can make the loaf as muffins (see my notes!) or serve with a scoop of vanilla ice cream for dessert. Whisk to aerate and break up any lumps; set aside. In a separate medium bowl, stir together buttermilk and vanilla until combined. In a small saucepan, combine the butter, sugar, golden syrup and milk. Bring to the boil, then remove from heat and set aside.
