Prepare fried Bread, as a Side Dish to the Poached Egg. I made a fried bread stalk with the poached egg. For this I use pizza yeast dough, cut and roll small pieces of dough together and fry them in vegetable oil. At the last minute I added the vinegar and a box of baby spinach, tossing until just wilted.

- Cut the spinach on a cutting board as big or small as you want it..
- Cut one small section of your onion and cut it until it is small (not too small).
- Get your egg out and start to boil some of your water for about 20 mins or less(or just until it starts to boil -_).
- Crack and put your egg in a large spoon measuring cup or and item that you can poach you egg with.(like a shoe🤫).
- Once your egg is done put is on a plate and put the onions on first. Make sure to spread the onions around the egg too..
- After you put the onions down put the spinach on the egg..
- After the spinach is on the egg you can put any other spices or decorations on the meal if you like..

Topped with toasted walnuts and the poached egg (our own free-range eggs, extra-delicious.) I served it with roasted heirloom winter squash, inspired by the photo, roasted beets with a sprinkling of bleu cheese, and toasted whole-grain bread. With a slotted spoon, transfer to a plate lined with paper towels to drain. Wring the excess water from the thawed spinach and add to the onions, garlic and mushrooms. Add spaghetti sauce and balsamic vinegar until sauce is heated through. Season with salt and pepper to taste.
