- Prepare 2 tablespoons of mayonnaise.
- You need 1 cup of sharp cheddar cheese.
- Prepare of Goya discos (I used the annatto one), partially thawed.
- You need of Olive oil cooking spray.

- Place 1 Goya discos on a plate......
- Using a rolling pin to spread out dough.......
- Place 1 tablespoon of tuna filling on center of each discos.......
- Seal edges with a fork........
- Place each finished empanada on a large cookie sheet that has been sprayed with olive oil cooking spray......
- Continue with the process until all tuna is used up........
- Bake in a preheated 400 degree oven for 20 minutes.......
